In Gaiden the stats displayed are those when affected by items. Strength, known as こうげきりょく/攻撃力 (lit. attack power) in Gaiden (as opposed to the usual ちから/力), seems to actually be changed by the weapon might. On a related note, attack speed seems to just be the actual speed when it is affected by items. Basically, weapons act the same as shields and rings, just affecting strength (attack power) and speed rather than defense, magic, or whatever.
In the data menu on the world map, pressing a horizontal button on the +control pad show's a unit's stats without any item equipped (you'll notice "NORMAL" instead of the item name). These are the unit's raw stats. It changes the unit's strength number shown to one without the weapon might, and any other stats affected by items will show the unit's raw stats as well.-->
